Zucchini Ragout with Carrots and Onions on the Grill

Zucchini ragout with carrots and onions is a light vegetable dish that can be easily cooked in foil on the grill. From a minimum of vegetables, you will get an excellent hot appetizer or side dish for any meat dishes. The stew can also be consumed cold – it will be just as tasty.

Ingredients

  • Zucchini – 1.3 kg
  • Carrots – 200 g
  • Onions – 100 g
  • Tomato paste – 3 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Preparing the ingredients.
  2. Peel the onion and cut into medium cubes.
  3. Peel the carrots and cut them into medium cubes.
  4. Peel the zucchini and cut into medium cubes.
  5. We send chopped zucchini, onions, carrots to a bowl. Add tomato paste. Salt and pepper to taste.
  6. Mix everything thoroughly.
  7. We prepare a foil about 70×70 cm in size (we overlap three sheets with a length of 70 cm). Stepping back 5-10 cm from the edge, spread the mixture of vegetables on the foil.
  8. We wrap the vegetables in foil and send them to the wire rack.
  9. Pour coal on the grill and light the fire. When the coals are burned out, pour water over the flame so that there is no open fire.
  10. Put the grill with vegetables in foil on the grill. Cooking zucchini with carrots and onions on the grill for 1.5 hours, turning every 20 minutes.
  11. Serve the vegetable stew in foil to preserve the vegetable juice.
