- 300 g almond (s)
- 0.5 ½ orange (s), the juice
- 200 g carrot (s)
- 100 g apples
- 5 egg (s)
- 2 tablespoon water
- 100 g suar
- 1 packet baking powder
- 1 packet vanilla sugar
- 1 pinch (s) salt
- 1 teaspoon cinnamon
- 60 g flour

- Grate the carrots and apples, grind the almonds, squeeze out the juice of half an orange, separate the eggs, beat the egg whites until they are firm and refrigerate.
- Mix the carrots, apples, almonds, juice of half an orange, egg yolk, water, sugar, vanilla sugar, cinnamon and a pinch of salt.
- Mix the flour and baking powder and stir into the batter. Mix everything together.
- Finally fold in the firmly beaten egg white.
- Pour into a silicone mold (does not have to be buttered because it is non-stick coating) and bake.
- Baking time: 50-60 min at 175 ° C
- After cooling, dust with powdered sugar or decorate with icing.
- The cake is suitable for a particularly low-fat diet because it contains no fat apart from eggs and almonds.
