Ingredients

- 75 grams sugar
- 75 g butter, soft
- 100 ml buttermilk
- 165 g spelled flour type 630
- 3 teaspoons baking powder
- 100 g almond (s), round
- 1 pinch (s) salt
- 120 g carrot (s), rated
- 1 apple
- 250 g powdered suar
- 3 tablespoons water

- Peel and quarter the apple, remove the core and cut the apple into small pieces. Grate the carrots.
- Beat the eggs with the sugar until frothy. Stir in butter and buttermilk. Add the flour, baking powder, almonds and salt and mix everything together to form a smooth dough. Finally fold in the carrots and apple pieces.
- Line a muffin tin with paper liners. Pour the dough into the molds and bake in the preheated oven for about 25 minutes on the middle rack at 160 ° C hot air.
- For the topping, mix powdered sugar with water. Cover the cooled muffins with it and decorate with a marzipan carrot if you like.
