Ingredients
- 220 g suar, brown
- 125 g flour
- 120 g flour, (whole rain)
- 90 g cranberries, dried
- 35 g desiccated coconut
- 30 g flaxseed
- 1 tablespoon cinnamon powder
- 2 teaspoon baking soda
- 0.5 teaspoon ½ salt
- 1 large apple (Granny Smith), grated
- 340 g carrot (s), shredded
- 250 g pineapple, cut into pieces, drained
- 120 ml oil
- 120 ml applesauce
- 55 g nuts (pecans), rouhly chopped
- 3 large egg (s)
- 1 teaspoon vanilla extract
- Fat for the shape

- Preheat the oven to 175 ° C, if possible bottom heat, otherwise top / bottom heat. Grease the muffin tins.
- In a large bowl, mix the two flours, cranberries, desiccated coconut, linseed, cinnamon, baking soda and salt. Add the apple and carrots and mix. Add the pineapple pieces, oil, applesauce, pecans, eggs and vanilla extract and briefly combine everything.
- Pour the batter into the muffin molds, filling the hollows only 3/4 full. Put the mold in the hot oven and bake the muffins for 35 minutes, do the chopsticks test (if a wooden stick stuck in the middle of a muffin comes out clean, the muffins are ready).
- Take the muffins out of the oven and let them cool in the pan, then serve.
