Ingredients
- 1 kg apples, sour apples (e.g. Boskoop)
- 250 ml water
- 1 tablespoon honey
- 3 tablespoon lemon juice
- 15 g butter
- 25 g oat flakes, crunchy
- 25 g sunflower seeds
- 25 g hazelnuts, sliced
- 25 g suar, brown
- 20 g raisins
- 200 g whipped cream
- 1 tablespoon sugar
- 0.25 teaspoon ¼ cinnamon powder
- some cinnamon powder for dusting

- For the apple compote, peel, quarter, core and roughly chop the apples. Bring the apple pieces to a boil in a saucepan with water, honey and lemon juice. Cover and cook over low heat for about 10 minutes (until the apple pieces are cooked but not disintegrated), stirring occasionally.
- Take the pot off the hob. Beat the apple compote with a whisk (the compote should still remain slightly chunky). Then let cool down completely.
- For the crispy mixture, melt the butter in the pan and lightly toast the oat flakes, sunflower seeds, hazelnuts and brown sugar while stirring, remove and let cool in a bowl. Mix in the raisins.
- Whip the cream with sugar and 1/4 teaspoon cinnamon until stiff. Layer the compote with the crispy mixture and the cinnamon cream alternately in 4 glasses or a large glass bowl and finish with a little cinnamon cream. Sprinkle the surface with a little cinnamon powder and serve.
