Put the butter with the sugar, rum flavor, vanilla sugar and salt in a bowl and stir together. Gradually add the eggs and keep stirring until the sugar has completely dissolved. Then stir the flour with the cornstarch, ground almonds and baking powder into the butter and egg mixture. Place the dough on the tray and smooth it out.
For the topping, dice the marzipan mixture, place in a saucepan with the cream, bring to the boil. Stir with the whisk until the marzipan has dissolved. Place the pot in a cold water bath and let it cool down.
In the meantime, peel the apples and cut into wedges. Drizzle with lemon juice to prevent them from turning brown. Now stir the eggs and cornstarch into the marzipan cream and pour the topping on the dough. Then spread the apples on top.
Bake the cake in a preheated oven at 190 ° C for about 40 minutes until it is golden yellow.
