Argentinean Vegetable Stew in Pumpkin

Argentinean vegetable stew in pumpkin is a wonderful and healthy dish that is perfect for vegetarians, fasting people, and those who like to taste unusual, tasty, and healthy food.

Ingredients

  • Pumpkin – 1.5 kg
  • Lentils – 100 g
  • Corn on the cob – 1 pc.
  • Potatoes – 2 pcs.
  • Carrots – 1 pc.
  • Tomato – 1 pc.
  • Bulgarian pepper – 1 pc.
  • Bulb onions – 2 pcs.
  • Dried apricots – 70 g
  • Cilantro, greens – 4 branches
  • Garlic – 2 cloves
  • Cumin (cumin) – 15 g
  • Salt – 20 g
  • Ground black pepper – 20 g
  • Sunflower oil – 50 g
  • Water – 1 l

Directions

  1. Let’s prepare the pumpkin. Cut off the top of the fruit, carefully making it in the form of a lid.
  2. Scrape the pumpkin from the inside to make a pot.
  3. Place the pumpkin in a baking dish, grease the inside with sunflower oil, cover with a prepared lid, and put in the oven for 30-40 minutes to bake.
  4. Now let’s prepare the vegetable stew. Peel the vegetables and rinse them under running water. Cut the onion into half rings.
  5. Cut the carrots into circles.
  6. Cut the potatoes into small cubes, about 3×3 cm.
  7. Finely chop the bell pepper. Place the vegetables in a skillet with thick, high sides. Let it simmer for 5 minutes.
  8. Cut the tomato into cubes, if desired, you can pour over it with boiling water and remove the skin from it. Cut the garlic into thin strips.
  9. Rinse the lentils under running water.
  10. Put the chopped tomato and garlic in the pan. Add lentils to the vegetables.
  11. Cut dried apricots into small pieces.
  12. Put dried apricots in a frying pan and add 1 liter of hot water. Cover with a lid and simmer vegetables for 20 minutes.
  13. Cut an ear of corn into large pieces.
  14. Grind the cilantro greens.
  15. Put corn, chopped greens in a frying pan, add cumin and salt, cover with a lid.
  16. Take out the baked pumpkin from the oven.
  17. Let cool the pumpkin by removing the lid.
  18. Put the prepared vegetable stew with lentils into the pumpkin.
  19. Cover the pumpkin with a lid and put it in the oven.
  20. After 15 minutes, the delicious and aromatic Argentinean vegetable stew with lentils is ready. Place the vegetable stew in the pumpkin on a large plate.

We serve the finished dish on the table right in the pumpkin.
