Ingredients

  • 250 g lass noodles
  • 2 tablespoon sesame oil
  • 2 onions)
  • 2 cloves garlic
  • 2 chilli pepper (s), red
  • 500 g minced beef
  • 4 tablespoon oil, (peanut oil)
  • 2 kaffir lime leaves
  • 2 lime (s), untreated
  • 50 ml soy sauce
  • 150 ml chilli sauce, sweet and hot
  • 0.5 ½ bunch mint
  • 1 bunch coriander greens
  • 100 g peanuts, roasted and salted
  • 1 bunch spring onion (s)

Instructions

  1. Prepare the glass noodles according to the instructions on the packet. Then mix with the sesame oil and keep warm.
  2. Peel and finely dice onions and garlic. Core the chilli peppers and also finely dice. Cut the kaffir lime leaves into very fine strips. Fry the minced beef in the wok in hot peanut oil, add onion, garlic and chilli cubes and fry with them. Add the kaffir lime leaf strips, fry them briefly, then deglaze with the soy sauce and remove from the heat.
  3. Wash the limes with hot water, dry them; Rub the peel of one lime, squeeze both limes and mix the juice with the chilli sauce. Add the zest and mix the dressing with the glass noodles.
  4. Rinse off the herbs, shake dry and roughly chop. coarsely chop the peanuts as well. Clean the spring onions and cut them diagonally into fine rings. Fold everything together under the minced meat and serve mixed with the glass noodles. Also tastes very good cold as a salad.
