Ingredients

  • 1 kg asparagus, (broken)
  • salt
  • sugar
  • butter
  • 250 g shrimp (s)
  • 30 g butter
  • 1 bunch spring onion (s)
  • Pepper from the grinder
  • 100 ml orange juice
  • 100 ml stock, (asparagus stock)
  • 250 ml hollandaise sauce
  • 2 teaspoons brandy

Instructions

  1. Cook the broken asparagus with salt, sugar and a pinch of butter, remove and set aside.
  2. Clean the prawns, remove the bowels if necessary and cook in the butter in a large pan for about 1 minute on each side. Cut the spring onions into rings and add to the prawns. Sweat briefly with it. Deglaze everything with asparagus stock and orange juice. Add the hollandaise and asparagus and heat everything again. Season to taste with salt, pepper and brandy.
  3. Ribbon noodles go very well with it.
