Ingredients

  • 1 kg asparagus, fresher, peeled
  • 1 package hollandaise sauce (homemade is not so good as the butter curdles)
  • 4 slices cooked ham, alternatively 8 raw ham
  • 4 slices cheese (raclette cheese)
  • 4 egg (s)
  • 300 g flour, possibly more
  • milk
  • 1 handful fresh herbs (e.g. chives, parsley, wild garlic, oregano, basil)

Instructions

  1. Put the peeled asparagus in a saucepan with plenty of water, salt and a pinch of sugar for about 20 minutes (please do not boil) until it is firm to the bite.
  2. In the meantime, make a pancake batter from the eggs, flour and milk. Season with pepper and salt and finally add the chopped herbs. Bake 4 large and firm pancakes from the mixture in portions.
  3. Everything is now prepared so far. Preheat the oven to 200 ° C.
  4. Now you take a pancake, put a slice of ham in it, put about 250 g of asparagus on top and pour some hollandaise sauce over it. Now you close the pancake. It is best to start at the bottom and fold a little over the asparagus ends, then the left side and then the right side. Last but not least, there is a slice of raclette cheese on top.
  5. The whole thing is pushed into the oven for about 15 minutes to gratinate.
  6. This meal is wonderful to prepare and everyone will be full.
