Ingredients

  • 500 g asparaus, white, raw
  • 300 ml veal stock, strong
  • 5 sheets gelatin
  • 200 ml whipped cream
  • salt
  • pepper
  • sugar
  • butter

Instructions

  1. Peel the asparagus and cut into fine slices, cook in the broth and season with salt, pepper, sugar and butter.
  2. Puree everything in the blender, add the soaked gelatin and pass through a fine hair sieve.
  3. As soon as the mixture begins to gel, fold in the whipped cream, pour into molds and refrigerate.
