Ingredients
- 50 g pine nuts, roasted liht brown without fat
- 200 g mozzarella, cut into 1 cm cubes
- 1 mango (s), ripe, peeled, cut into cubes
- 50 g rocket, washed
- 100 ml orange juice, freshly squeezed
- salt and pepper
- 0.5 ½ chilli pepper (s), red, cut into fine rings, optional
- 3 tablespoon olive oil
- 1 tablespoon acacia honey
- 1 avocado (s), ripe, halved, pitted, peeled, diced
- 0.5 ½ lime (s), the juice

- Reduce the orange juice in half. Mix the concentrate with salt, pepper, red chilli pepper, olive oil and honey to form a vinaigrette.
- Drizzle the lime juice over the avocado cubes, season with salt and pepper.
- To serve, place a higher metal ring on each plate and fill in a layer of avocado. Put the mozzarella on top, then the mango. Press the whole thing firmly with a spoon and drizzle with some orange vinaigrette. Pull off the ring.
- Mix the rocket with the rest of the vinaigrette in a bowl and place a few rocket leaves on each tower. Distribute the rest around it. Serve immediately sprinkled with pine nuts.
- We eat this as a main course, as a starter it is enough for 4 people.
