Ingredients

  • 1 avocado (s), finely diced
  • 1 orange (preferably blood orange), filleted, diced
  • 1 tablespoon orange juice
  • 1 tablespoon chives, cut into rolls
  • 1 tablespoon olive oil
  • 0.5 teaspoon ½ chilli, very finely chopped
  • 1 teaspoon sesame, roasted without fat
  • Salt and pepper from the mill
  • Leaf lettuce for decoration
  • 4 slices ham, raw, halved lengthways

Instructions

  1. Fry the raw ham until crispy without fat and drain on kitchen paper. Mix the avocado and orange with the orange juice (save when filleting), chilli, chives and sesame seeds.
  2. Spread the lettuce leaves on 2 plates and put the tartare on top - with a ring if possible. Garnish with the raw ham.
