Ingredients

  • 2 avocado (s), ripe
  • 2 teaspoons lemon juice
  • 80 g pine nuts
  • 2 gherkins, cut into thin slices

For the dressing:

  • 3 tablespoon olive oil
  • salt and pepper
  • 2 cloves garlic
  • 4 tablespoon, heaped natural yogurt
  • 10 leaves peppermint, finely chopped

Instructions

  1. Peel the avocados, remove the stone, cut the meat into cubes and drizzle with the lemon juice. Mash the pine nuts a little and mix with the gherkin slices into the avocado cubes. Add the oil and season with salt and pepper.
  2. Grate the garlic cloves with a little coarse salt, stir into the yoghurt together with the peppermint and whip lightly with a fork. Put on the salad, but mix well before serving. Serve the salad well chilled.
