Ingredients

  • 1 kg potato (s), floury
  • 1 medium onion (s)
  • 2 cloves garlic)
  • 400 g diced ham
  • salt and pepper
  • some butter
  • 4 egg (s)
  • 1 handful fried onions
  • cream or milk

Instructions

  1. The potato, peel, wash and boil in salted water. In the meantime, peel and finely dice the onion and garlic cloves. Cut the ham into fine cubes, unless bought ready.
  2. Drain and mash the potatoes. Create the desired consistency by adding cream or milk and butter.
  3. Sauté the onions with the garlic in hot butter until translucent and add the ham cubes. Fry both as desired.
  4. Mix (or crush) the potatoes with ham and onions and season to taste with salt, pepper and fried onions. Fry the eggs, not forgetting salt and pepper. Arrange and serve everything together on plates.
  5. Danish or Nordic cucumber salad goes well with it, which gives the whole thing an extra touch (but drain the cucumber water first!).
