Mix the ingredients for the pancakes and bake about 8-10 pancakes from the batter.
Dice the onion and garlic, cut the zucchini, carrots, bell pepper and leek into cubes or slices. Heat the olive oil in a pan, fry the onion and garlic briefly, add the vegetables and stir-fry for about 2-3 minutes. Then deglaze with the vegetable stock, stir in the tomato pulp, paprika pulp and red curry paste and simmer over a low heat for about 5 minutes.
Pour in the cream. Season to taste with pepper from the mill, add parsley.
Put the vegetable mixture in a baking dish. Roll up the pancakes and place on top of the vegetables. Sprinkle with the grated cheese and bake in the middle of the oven at 200 ° for about 20-25 minutes.
A crunchy leaf salad goes well with it.
