Ingredients

  • 4 large potatoes, a 200g
  • 2 egg (s)
  • 1 bunch radishes
  • 1 bunch chives
  • 1 bunch parsley
  • 500 g quark, 20%
  • 1 tablespoon oil
  • 1 tablespoon sparkling mineral water
  • salt and pepper

Instructions

  1. Wash the potatoes, pat dry and place on a baking sheet. Bake in a preheated oven (electric stove 200 / convection 175 degrees) for about 1 hour or until cooked.
  2. Boil the eggs for about 10 minutes. Quench and let cool. Clean and wash the radishes and cut into sticks. Wash the herbs and chop them up, peel the eggs and chop them too.
  3. Mix the quark, water and oil together until smooth. Mix in the eggs, radishes and herbs. Season to taste with pepper and salt.
  4. Cut the potatoes crosswise and push them apart a little. Serve with the spring quark.
