Ingredients
- 8 medium potato (s)
- 150 ml rapeseed oil
- salt
- Pepper, black
- 5 tablespoon butter
- 4 tablespoon breadcrumbs
- 100 g crème fraîche
- 200 g low-fat quark
- Chives, finely chopped
- Parsley, finely chopped
- Basil, finely chopped
- Dill, finely chopped
- 1 lime (s), add the juice from it

- Wash and dry the potatoes thoroughly. Now cut into each potato at short intervals until just before the end, so do not cut through. Brush with oil, also inside between the resulting pages. Season with salt and pepper (don`t forget the insides here too).
- Bake at 200 ° C for about 30 minutes until golden brown and occasionally brush with a little salted oil.
- Melt the butter in a pan and fry the breadcrumbs lightly golden. Now distribute the breadcrumbs on the potatoes and bake again for 10-15 minutes.
- For the herb quark, mix crème fraîche with quark and the finely chopped herbs and season with salt, pepper and lime juice.
- Place 4 tablespoons of herbal quark on a plate and, depending on the size of the potatoes, place 2-3 potatoes on top and serve hot.
