Autumn is the harvest time and the celebration of pumpkin dishes. It is quite difficult to surprise someone with porridges, soups, or just an ordinary baked pumpkin, but in nature, there is such an interesting variety of these fruits as spaghetti pumpkin. After baking, its pulp can be easily disassembled into threads resembling thin noodles. Mix the noodles with the chicken, fill it with creamy sauce and sprinkle with cheese, and you end up with a tender casserole with a crispy golden crust. You can bet that many will never guess what this dish consists of!

Ingredients
1 large yellow squash (approx 1.1 kg)
2 tbsp olive oil
280 gr. sliced mushrooms
1 red bell pepper, diced
4 scallions feathers, white and green parts, cut into slices separately
0.5 teaspoon cayenne pepper
1 tablespoon. drinking cream 10%
2 tablespoon. grilled chicken (discard skin and bones)
3 tablespoon. grated cheddar cheese
Directions
Preheat oven to 220 ° C.
Use a serrated knife to cut the pumpkin in half across. Use a spoon to scoop out and discard the seeds. Place the pumpkin in a 20cm * 20cm microwave dish with 2 tbsp water. Cover the dish with cling film and microwave on a high setting for about 13-14 minutes, until the pumpkin is very soft and the fibers are easily peeled off with a fork.
Scrape the flesh off the rind with a fork, dividing it into “spaghetti”. Leave the pulp in the skin. Rinse and dry the mold.
In parallel, heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and, stirring often, fry until they lose most of their moisture and they are browned for about 5 minutes.
Add bell peppers, white chives, cayenne pepper, 1 teaspoon. salt and a few turns of the pepper shaker. Sauté, stirring occasionally, until the peppers are tender, about 5 minutes. Pour in the cream and bring to a boil. Reduce heat to medium and simmer until liquid evaporates slightly and mixture thickens slightly, 5-7 minutes.
Add chicken and 2 tablespoon. Stir until cheese is melted. Add pumpkin spaghetti and stir until smooth.
Transfer the mixture to a baking dish and sprinkle with the remaining cheese on top. Bake for 17-20 minutes. until the cheese melts and begins to bubble. Let stand 5 minutes. Sprinkle with green onions just before serving.
