Beans stewed with pumpkin are a delicious vegetable dish for savory snack lovers. Suitable for fasting and healthy eating.
Ingredients
Boiled beans – 100 g
Pumpkin – 200 g
Tomato sauce – 100 g
Bulb onions – 1 pc.
Garlic – 2 cloves
Dried thyme – 0.5 teaspoon
Paprika – 0.5 teaspoon
Ground red pepper – 0.3 teaspoon
Ground ginger – 0.3 teaspoon
Vegetable oil – 4 tbsp
Sugar – 1 pinch
Salt to taste
Fresh parsley – for serving
Directions
Prepare the food. Wash and peel the vegetables. Cook the beans in advance. To do this, the beans are soaked in water for 4-8 hours, and then filled with fresh water and cooked until tender (soft).
Dice the onion. Cut one garlic clove into slices.
Cut the pumpkin into medium cubes.
Fry onions and garlic in vegetable oil until soft and transparent.
Send the pumpkin cubes to the pan and cook for 10 minutes.
Add all the spices and herbs. Cook the pumpkin for another 2 minutes.
Pour in tomato sauce and bring to a boil.
Add beans. Simmer beans with pumpkin for 5 minutes.
Finely chop the remaining clove of garlic.
Sprinkle garlic on the beans and pumpkin and turn off the heat after a minute.
Serve the beans, stewed with pumpkin, as an appetizer or side dish, garnished with fresh herbs.
