- 750 ml milk
- 90 g butter
- 0.5 ½ vanilla pod (s) or 1/2 packet vanilla flavor
- 4 tablespoon sugar
- 1 teaspoon lemon peel, grated
- 250 g ribbon noodles
- 1 pinch (s) salt
- 400 g apples, diced
- 3 egg (s), separated
- 1 pinch (s) cinnamon
- 250 ml whipped cream
- 1 packet vanilla sugar

- For the vanilla noodles, bring the milk to the boil with 40 g butter, the vanilla pod slit lengthways, 4 tablespoons sugar and the lemon peel and add the noodles. Add a pinch of salt and cook over a moderate heat until the pasta is soft and the liquid has almost completely evaporated.
- Important: Do not turn the heat too high, otherwise the pasta will be too soft, but not too low, otherwise there will be too much liquid.
- Remove the vanilla pod again. Now add the apples to the pasta and mix well. Put both in a buttered baking dish.
- Separate the eggs for the sauce. Mix the egg yolks with 2 tablespoons of sugar until frothy. Mix in the salt, cream, vanilla sugar and cinnamon. Fold in the whipped egg whites and pour over the pasta.
- Cover with flakes of butter or margarine and bake in a preheated oven at 180 degrees for about 20 minutes. Serve warm with vanilla ice cream.
