Biscuit with Cottage Cheese and Blueberries

Delicate and moderately sweet biscuit with cottage cheese and blueberries ideally combines thin crunchy dough and a lot of juicy cottage cheese filling with blueberries.

Ingredients

For the dough:

  • Vegetable oil – 60 g
  • Water (boiling water) – 60 g
  • Flour – 170 g
  • Baking powder – 0.5 teaspoon
  • Powdered sugar – 1 tbsp

For filling:

  • Blueberries – 70 g
  • Cottage cheese – 200 g
  • Sour cream – 1 tbsp (as needed)
  • Starch – 2 tbsp
  • Sugar – 2 tbsp (to taste)
  • Vanilla sugar – 1 teaspoon
  • Egg – 1 pc.
  • Powdered sugar (optional)

Directions

  1. In a bowl, combine flour (slightly larger than a 250 ml glass), powdered sugar and baking powder. Stir.
  2. Make a hole in the flour mixture, pour vegetable oil and boiling water into it.
  3. Knead the dough. Use a spoon to knead first to avoid scalding it until it cools.
  4. Knead the dough with your hands for a few minutes until smooth. Cover the bowl of dough with a towel and set aside.
  5. Prepare the filling.
    Blueberries can be substituted with other berries of your choice.
  6. Combine cottage cheese with an egg, sour cream (if your cottage cheese is soft enough, then sour cream can not be added), sugar, vanilla sugar and starch (take a teaspoon of starch to roll blueberries).
  7. Punch the mixture with a hand blender until smooth.
  8. Wash the blueberries and pat dry on paper towels.
    Combine the blueberries with the remaining starch and stir.
  9. Gently whisk the blueberries into the curd filling.
    Preheat the oven to 180 degrees.
  10. Roll out the rested dough on a sheet of parchment into a round layer about 3 mm thick.
  11. Put the filling on the center of the dough and spread it over the surface of the cake, not reaching the edge about 5 cm.
  12. Wrap the edges of the dough over the filling.
  13. Transfer the biscuit and parchment to a baking sheet.
    To prevent the biscuit from deforming during baking, you can fix it with a pastry ring.
  14. Bake the biscuit with cottage cheese and blueberries in an oven preheated to 180 degrees for about 30 minutes, until golden brown.
  15. Allow the biscuit to cool completely and serve.
    Before serving, if desired, the biscuit can be sprinkled with powdered sugar.
