Ingredients

  • 300 g blueberries, fresh or frozen
  • 500 g quark (low-fat quark)
  • 75 grams sugar
  • 1 packet vanilla sugar
  • 5 egg (s), separate
  • 75 g semolina
  • 75 g butter
  • 1 lemon, the grated zest it, the juice half a lemon
  • 25 g suar
  • 1 pinch (s) salt

Instructions

  1. Wash the blueberries and drain them well
  2. For the quark mixture, stir together quark with 75 g sugar, vanilla sugar, egg yolk, semolina, butter, lemon zest and lemon juice. Mix egg whites with salt and 25 g sugar until stiff. Fold the egg whites under the curd mixture. Put the mixture in a greased springform pan and smooth it out. Spread two thirds of the blueberries over the mixture.
  3. Bake in a preheated oven at 175 ° C for about 30 minutes. Then spread the rest of the blueberries on top and bake for another 35 minutes. After the baking time, switch off the oven and then let the cake cool down in the oven for another 15 minutes - then it will not collapse.
