Ingredients

  • 200 g blueberries
  • 80 g flour
  • 120 ml milk
  • 1 tablespoon honey, liquid
  • 4 egg yolks
  • 1 tablespoon lemon peel, grated
  • salt
  • 20 ml schnapps, (blueberry spirit)
  • 1 vanilla sugar
  • 2 egg whites
  • 40 grams sugar
  • 40 g butter

Instructions

  1. Mix flour, milk and honey in a bowl. Stir in the egg yolks and season with lemon zest and a pinch of salt.
  2. Stir in the blueberry spirit and vanilla sugar. Beat the egg white with 20g sugar very stiff and stir carefully into the liquid batter.
  3. Melt 20g butter in a pan. Let the blueberries take on the shine for a short time, pour the batter over them and stir gently. Let cook for a few minutes until the dough comes off the bottom of the pan. Divide into 4 parts with a spatula. Carefully turn the parts. Put the remaining butter on the side in the pan and sprinkle with the remaining 20g sugar. Let the sugar caramelize slightly and let it run under the Schmarrn. Serve immediately.
