Homemade breadsticks are great for complementing various foods and drinks instead of bread or croutons. If, after baking, you leave them in the oven for a while, the sticks are crispy.
Cook: 1 hour 20 minutes
Servings: 8
Ingredients
For starter culture:
Water (warm) – 65 g
Flour – 100 g
Dry yeast – 2 g
For the dough:
Water (warm) – 300 ml
Vegetable oil – 65 g
Flour – 500 g + for working with dough
Dry yeast – 5 g
Salt – 5-10 g
Flour (for working with dough) – 2-3 tbsp
Vegetable oil (for greasing the baking sheet) – 2-3 tbsp
Directions
Prepare the starter: In a bowl combine flour (100 g – 2/3 cup, 250 ml capacity), water, and yeast. Stir. Sprinkle the work surface with 1-1.5 tablespoons of flour, put the dough there, and knead for 1-2 minutes.
Put the starter culture in a bowl, cover with cling film and leave at room temperature for 1 hour, and then refrigerate for 8-9 hours.
After a while, start kneading the dough. Pour warm water into a large bowl, add salt. Stir and wait for the salt to dissolve. Add starter culture to the water. Stir. It is not necessary that all the leaven is dissolved in water.
Add vegetable oil and yeast. Stir. Gradually start adding flour (about 3 heaped 250 ml glasses of flour will go into the dough). Stir the dough after each adding flour.
Stir first with a spoon, and then knead with your hands a soft, springy, slightly sticky dough to your fingers. Sprinkle flour over the dough and form a ball. Place the dough in a bowl, cover with a cloth towel and leave in a warm place for 1.5-2 hours.
Preheat oven to 190 degrees. Sprinkle flour on the table and add the dough that has come up. Knead the dough and divide it into 2 parts. Roll each part of the dough into a layer about 3 mm thick. The width of the layer should be approximately equal to the width of the baking sheet.
Cover the baking sheet with parchment paper, grease with vegetable oil. Cut the rolled out layer of dough into strips about 1-1.5 cm thick. Twist each strip into a bundle and place it on a baking sheet.
Bake the sticks for 15-20 minutes at 190 degrees. During baking, the sticks should be sprinkled 2-3 times with water from a spray bottle or a brush moistened with water. Remove the finished breadsticks from the baking sheet and cool.
