Ingredients

  • 2 cloves garlic, pressed
  • 2 tablespoon butter
  • 2 onion (s), diced
  • 600 g broccoli, cut into florets
  • Paprika powder
  • 200 ml white wine
  • 600 ml vegetable stock
  • 2 tablespoon chives, cut into rolls
  • 1 red pepper (s), cut into very thin strips
  • Creme fraiche Cheese
  • salt and pepper

Broccoli Cream Soup with Herbs and Peppers

Instructions

  1. Sauté the garlic and onions in butter. Add the broccoli florets and sauté briefly. Pour in the broth and wine. Season with paprika powder, salt and pepper. Simmer over medium heat for approx. 8 minutes. Take out a few broccoli florets and set aside. Puree the rest of the broccoli. Add the chives and paprika strips and simmer for another 5 minutes. Season to taste, arrange on plates, garnish with the remaining broccoli florets and crème fraîche and serve immediately.
