Butter Dough on Kefir (Like Fluff)

Butter yeast dough with kefir is suitable for sweet and savory pastries. Buns and pies made from this dough come out fluffy and soft. Kefir dough can be prepared in two ways: warm or cold.

Cook: 1 hour 50 minutes

Ingredients

  • Flour – 550 g
  • Fresh yeast – 15 g
  • Or dry yeast – 5 g
  • Kefir – 300 ml
  • Butter – 50 g
  • Egg – 1 pc.
  • Salt – 3 g (1/2 teaspoon)
  • Sugar (for sweet pastries) – 100 g
  • or sugar (for savory pastries) – 30 g

Directions

  1. We dilute yeast in warm kefir. The mass should become homogeneous.
  2. We knead the dough from yeast, kefir, salt, sugar, eggs, melted butter and flour.
  3. We spread the dough on the table, sprinkled with flour, and knead the dough until smooth for 5-7 minutes. Transfer the dough to a deep container. Cover with cling film. We leave it for 1.5 hours in a warm place or put it in the refrigerator for at least 4 hours, or better overnight.
  4. If yogurt pastry is prepared in a cold way, it should be allowed to warm up at room temperature for 40 minutes.
  5. Butter dough with kefir is ready. The yield is about 1 kg of dough. It makes airy buns and pies.
