Ingredients

  • 4 redfish fillet (s)
  • 2 shallot (s)
  • 1 red pepper (s)
  • 1 yellow pepper (s)
  • 1 green pepper (s)
  • 1 large zucchini
  • 100 g olives, black, without stone
  • salt and pepper
  • Basil and parsley, dried
  • Lemon juice

Instructions

  1. Season the fish fillets well on both sides with salt and pepper and drizzle with lemon juice.
  2. Peel and finely chop the shallots and sauté in a little olive oil until translucent.
  3. Meanwhile, cut the peppers into cubes and thinly slice the zucchini.
  4. Add the paprika and zucchini to the shallots and sauté.
  5. Add olives and a little lemon juice, season with basil, parsley, salt and pepper.
  6. Place the fish fillets in a baking dish and spread the vegetables on top. Drizzle again with a little lemon juice.
  7. Bake at 200 ° C for about 25 minutes.
