Carrot Casserole with Cheese and Crackers

A bright and juicy casserole made from simple and affordable products. Boil the carrots cut into slices until half cooked. Then combine with onions, add mayonnaise with horseradish, sprinkle with grated cheese and chopped cracker. We send everything to the oven. The finished casserole will delight you with its delicate texture and pleasant taste.

Ingredients

  • Carrots – 500 g (4 pcs.)
  • Cheese (grated) – 30 g
  • Crackers – 25 g (or 2 tablespoons chopped)
  • Onions (small) – 65 g (1 pc.)
  • Horseradish (ready-made) – 1 teaspoon
  • Creamy mayonnaise – 125 ml
  • or mayonnaise – 100 g + 30 ml heavy cream
  • Fresh parsley (for serving) – 3 sprigs

Directions

  1. We prepare the necessary products. Choose crackers according to your taste. Grate the cheese on a medium grater.
  2. Peel the carrots, wash and cut into thin slices. Cut the large circles in half.
  3. Pour half a glass of water (125 ml) into a saucepan, bring to a boil, and put the carrots in boiling water. Reduce heat and cook the carrots, covered over low heat, stirring a couple of times, about 7 minutes. The carrots should be soft, but not soft.
  4. Peel the onion, wash it and rub it on a fine grater.
  5. Add 1 teaspoon of horseradish to the creamy mayonnaise and mix.
  6. After the time has elapsed, fold the carrots onto a sieve, letting the water drain, and transfer them to a baking dish. We turn on the oven to heat up to 180 degrees.
  7. Add onions to the carrots.
  8. Gently mix the onions and carrots.
  9. Add mayonnaise with horseradish to the carrots and onions and mix.
  10. Grind crackers into large crumbs. Add cheese to the crackers.
  11. Stir the cheese with crackers and sprinkle the carrots on top in a mold.
  12. We send the carrots to an oven preheated to 180 degrees for 25-30 minutes.
  13. Carrot casserole with cheese and crackers is ready.
  14. Decorate with parsley and serve. This casserole is perfect as a side dish with fish or meat. Carrots according to this recipe will be good as an independent dish.
