Ingredients

  • 500 g carrot (s)
  • 25 ml olive oil
  • 50 cl cream OR:
  • 125 g potato (s)
  • 50 cl broth
  • 4 star anise
  • 50 g butter
  • salt
  • Pepper, whiter

Instructions

  1. Peel the carrots, cut into small pieces and cook in 20 g butter and the oil for about 5 minutes. Pour in the broth. Then add the cream and bring to the boil. If you want it to be lower in calories, you can use the potatoes instead of the cream (of course also peeled and chopped up).
  2. Cover and simmer over a low flame for 1 hour until the carrots are soft.
  3. After 20-30 minutes of cooking time, add the star anise (best in a spiced egg or tea bag).
  4. When the carrots are soft, remove the star anise and puree the soup. Finally, add the rest of the butter and season the whole thing with salt and pepper.
