  • 400 g salmon fillet (s), fresh
  • 3 courgettes, fresh
  • 250 g mushrooms, brown, fresh
  • 1 large vegetable onion (s), fresh
  • 4 clove (s) garlic, fresh
  • 100 g butter, salted
  • 200 ml white wine or Prosecco
  • 250 ml cream
  • broth, instant or paste
  • Star anise, ground
  • salt
  • Orange pepper or black pepper

Instructions

  1. For the sliced salmon, finely chop the onion and garlic, quarter the mushrooms or cut into slightly thicker slices and cut the salmon into spoon-sized cubes, removing any skin.
  2. Leave half of the butter in a pan. Fry the onions with the garlic until translucent on a low heat, but do not brown - otherwise the garlic will be bitter. Add the mushrooms and let them collapse, but don`t fry them! Pour in the white wine and reduce it by half, taking care not to set the temperature too high. Pour in the cream and season the sauce with stock powder, pepper and salt. Turn down the heat and let the sauce simmer very slightly. Then add the salmon and let it steep. Under no circumstances should the dish simmer intensively from now on, otherwise the salmon will get dry and the sauce will boil down too much. Just stir the sliced salmon carefully so as not to chop the salmon too much.
  3. For the zucchini noodles, add the zucchini e.g., with a vegetable peeler, better still with a spiral cutter, cut into thin strips. Do not remove the peel under any circumstances; wash the zucchini well beforehand.
  4. Leave the second half of the butter in another pan or in a high saucepan. Add the zucchini noodles and let them soak in for a moment. They should still have a little bit of bite and not become completely soft. The zucchini noodles with star anise powder - dose this carefully - season with pepper and salt.
  5. Fold the finished zucchini noodles under the sliced salmon.
