Ingredients

  • 300 g beef tartare, freshly chopped, fillet or hip
  • 1 medium egg yolk, very fresh
  • 1 medium onion (s), finely diced
  • salt
  • pepper
  • paprika powder
  • Nutmeg, grated

Instructions

  1. The freshly chopped beef tartare is mixed well with finely diced onion, salt, pepper, paprika (hot or sweet as desired), nutmeg and a very fresh egg yolk. Arrange immediately with bread or rolls.
  2. Tip:
  3. A little softened butter can be folded in if the mixture is still too dry.
  4. This dish requires very fresh, high quality ingredients.
  5. Worcestershire sauce, mustard and a dollop of anchovy paste round off the taste.
  6. Decoration with parsley
