Ingredients

  • 1 tablespoon oil
  • 1 onion (s), red, finely diced
  • 400 g basmati
  • 1 tablespoon curry paste, red
  • 750 ml vegetable stock
  • 1 cauliflower, cut into florets
  • 50 g almond (s) (almond slivers), roasted without fat
  • 20 g coriander reens, chopped

Instructions

  1. Steam the onion in oil. Add rice and curry paste and mix well so that the rice grains are coated.
  2. Add the vegetable stock and cauliflower. Bring to the boil and cook covered for 13-15 minutes, until the rice is soft and the liquid is soaked up. Stir in the almonds and coriander.
