Cauliflower with Chicken and Rice

Cauliflower with chicken and rice is a tasty, healthy, and satisfying dish. These are lazy cabbage rolls, in which white cabbage is replaced with cauliflower, and minced meat is replaced with boiled chicken fillet. The idea for this recipe came to me when I was breastfeeding and I could not eat ordinary cabbage, but I wanted cabbage rolls. Also, I cooked soup and I had boiled chicken. Such original lazy cabbage rolls turned out to be very fragrant, juicy, and amazingly tasty, so I decided to share this recipe with you. And also, importantly, cauliflower with a chicken fillet is prepared as simply and quickly as possible.

Ingredients

  • Cauliflower (fresh or frozen) – 400 g
  • Chicken fillet – 300-400 g
  • Rice (round) – 1 cup
  • Onions – 1-2 pieces
  • Dill (dried or fresh) – to taste
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. Wash the chicken fillet. Pour water into a saucepan, bring it to a boil, and put the chicken in boiling water. Boil the chicken for 20 minutes. Allow the chicken to cool down without removing it from the broth to make it juicier.
  2. Peel the onion and cut it into cubes. Heat some unscented vegetable oil in a skillet and fry the onion until deliciously golden brown. This will take about 10-15 minutes.
  3. While the onions are fried, prepare the cauliflower. Wash it and disassemble it into inflorescences. If you are using frozen cabbage, then you do not need to defrost it first. Place the cauliflower over the onion and sauté for 5 minutes.
  4. Wash the cauliflower, disassemble into inflorescences and put on the onion, fry for 5 minutes
    Rinse the rice thoroughly under running water and lay an even layer on top of the cauliflower.
  5. Rinse the rice and put in a skillet with onions and cauliflower
    Next, pour water into the pan so that it slightly covers the rice. I needed one glass of water.
  6. Pour water into the pan, cover, and cook for 20-25 minutes until the rice is fully cooked
    Cover the pan and cook until the rice is cooked for about 20-25 minutes. You do not need to stir the rice during cooking.
    Remove the chicken from the stock, save the stock for another dish, and cut the chicken fillet into small cubes. Add the chicken to the pan 3 minutes before the end of the cooking of our lazy cabbage rolls.
  7. Cut the boiled chicken into cubes and place in the pan 3 minutes before the end of cooking
    Salt and pepper the chicken and cauliflower immediately and add the dill.
  8. Season with salt and pepper the cauliflower and chicken and add the dill
    The cauliflower chicken is ready. Serve this delicious, flavorful, and healthy dish hot. When serving, such cabbage rolls can be supplemented with sour cream.
