Ingredients

  • 400 g flour (whole wheat)
  • liter ⅛ water, lukewarm
  • 1 packet yeast
  • 0.25 liter ¼ buttermilk
  • 20 g butter, melted
  • 2 teaspoons salt
  • 150 g cheese (Emmentaler), rated
  • 2 tablespoon milk for brushing
  • 1 egg yolk for brushing
  • salt and pepper
  • 50 g cheese (Emmentaler), rated, for sprinklin
  • Paprika powder

Instructions

  1. Put the flour in a bowl and make a well in the middle. Pour in the lukewarm water and yeast and use part of the flour to make a steam (pre-dough). After about 10 minutes, add the buttermilk, butter, salt and 150 g grated Emmentaler cheese and knead into a medium-firm dough. Then let rise to double the height.
  2. Knead the dough again briefly, divide it into 12 parts and form small bread rolls out of it. Whisk the milk and egg yolk well and brush the bread rolls with it.
  3. Mix 50 g of Emmentaler cheese with salt, pepper and paprika powder and sprinkle the bread with it. Place on a baking sheet and cover and let rise in a warm place for about 10 minutes. Push the tray into the middle of the oven.
  4. Bake in the preheated oven at 225 ° C for about 25 minutes.
  5. Tip: Place a container filled with hot water in the oven.
