  • 225 g wheat flour, type 550

  • 1 teaspoon salt
  • 3 egg (s), size M
  • 2 teaspoons lemon peel, grated
  • 100 g butter, cold
  • 400 g quark 0.2% fat
  • 150 g mountain cheese, rated
  • salt and pepper

Instructions

  1. Mix the flour with the baking powder and the salt. Add 1 egg, the lemon zest and the butter in pieces and knead everything well. Chill the dough in cling film for about 30 minutes.
  2. Mix the quark with the remaining eggs and cheese and season with a pinch of salt and pepper.
  3. Roll out the dough on a floured surface. Grease a quiche pan and line it with the batter. Pull up the edge. Spread the quark mixture on the dough and bake in the preheated oven on the middle rack at 200 ° C top / bottom heat for about 30-45 minutes.
