Cheesecakes with Cottage Cheese, Raisins and Lemon Zest

Delicate cheesecakes made of yeast dough stuffed with cottage cheese with raisins and lemon zest are wonderful homemade cakes that will decorate any tea party!

Cook: 2 hours


For the dough:

  • Flour – 500 g
  • Milk – 250 ml
  • Butter – 100 g
  • Sugar – 130 g
  • Dry yeast – 7 g
  • Eggs – 2 pcs.
  • Salt – 1 pinch

For filling:

  • Cottage cheese – 600 g
  • Eggs – 2 pcs.
  • Sugar – 150 g
  • Raisins (dark) – 100 g
  • Lemon (zest) – 1 pc.
  • Sour cream (if necessary) – 2-3 tbsp

For lubrication:

  • Egg – 1 pc.

For sprinkling (optional):

  • Powdered sugar – 1 tbsp


  1. Melt the butter and let it cool.
  2. Preheat the milk until it is warm but not hot. Dissolve sugar and salt in milk. Add eggs and melted butter.
  3. Mix thoroughly.
  4. Combine flour with yeast, stir. Add half the flour to the egg and milk mixture and stir.
  5. Knead the dough with a mixer or with your hands (about 5 minutes), gradually adding in the remaining flour.
  6. The dough should be soft and elastic.
  7. Cover the dough with cling film or a towel and place in a warm place for 1-1.5 hours.
  8. When the dough has doubled in volume, crush it slightly and divide into 12 equal parts.
    Cover the baking sheet with parchment.
    Roll each piece of dough into a ball and place a short distance apart on a baking sheet. Cover the dough with a towel and let sit for 15 minutes.
    Turn on the oven to heat up to 170 ° C.
  9. Remove the zest from the lemon with a fine grater.
  10. Combine cottage cheese, sugar and eggs in a suitable container and beat with a mixer.
    (If the mixture is too thick, add a little sour cream.)
  11. Pour lemon zest and raisins into a container to the curd and egg mass.
  12. Stir the curd filling.
  13. Make a depression in the center of each dough ball with the bottom of a small glass.
  14. Fill the resulting grooves with the curd filling.
  15. Beat the egg with 2 tbsp of water.
  16. Brush the dough with the egg mixture.
  17. Place the baking sheet in a preheated oven and bake the cheesecakes with cottage cheese, raisins and lemon zest for 25-30 minutes.
  18. Cheesecakes with cottage cheese, raisins and lemon zest are ready. Sprinkle the cakes with powdered sugar if desired.
