Ingredients

  • 100 g jasmine rice
  • 250 g chicken breast
  • 1 zucchini
  • 2 carrot (s)
  • 8 mushrooms
  • 1 small cucumber (s)
  • 1 onion (s), red
  • 0.5 ½ head iceberg lettuce
  • 0.5 ½ bunch parsley
  • 50 g sesame seeds
  • 500 ml vegetable stock
  • 4 tablespoon olive oil
  • 3 tablespoon apple cider vinegar
  • Chilli flakes
  • Turmeric powder
  • Paprika powder
  • salt and pepper

Instructions

  1. Wash the parsley, shake dry and chop finely. Peel, clean and finely dice the onion. Wash and clean the zucchini and cut into smaller sticks. Wash, peel and cut the carrots into smaller sticks. Clean the mushrooms, remove the stem and then quarter. Rinse the chicken breast, pat dry and cut into strips. Wash the lettuce, spin dry and cut into strips. Wash the cucumber, cut open, core and cut into sticks.
  2. Cook the rice in plenty of salted water with a little turmeric powder according to the instructions on the package.
  3. Mix 3 tablespoons of olive oil, 3 tablespoons of vinegar, paprika powder, salt, pepper, parsley and red onion into a sauce.
  4. Bring the vegetable stock to a boil and cook the carrots and zucchini in it for about 8 minutes.
  5. Roast the sesame seeds in a pan without oil and then take them out of the pan immediately. Fry the mushrooms in a pan in a little olive oil. Season with salt and pepper, then remove and keep warm. Fry the chicken in a pan in a little olive oil, then finish cooking over a low heat, season with pepper and chilli flakes, remove and keep warm.
  6. Pour the rice into bowls, add the carrots, zucchini, mushrooms, chicken, iceberg lettuce and cucumber in the bowl next to it in a circle. Sprinkle with sesame seeds and pour the sauce over them.
