Chicken Breast

The recipe for chicken breast balyk was found on the Internet, adapted for yourself. A good snack with beer, and more. Not for an amateur, since no heat treatment. Use only proven products for cooking balyk!

Ingredients

  • Chicken breast – 500-700 g
  • Salt – 200 g
  • Ground pepper (mixture of peppers) – 1 tbsp
  • Provencal herbs (preferably) – 1 tbsp
  • Cognac – 50 g
  • Bay leaves – 6-8 pcs.

Directions

  1. Remove bones from chicken breast, separate fillet from skin. Wash the chicken fillet and pat dry with a paper towel. Mix salt, spices, cognac. Roll the breasts in the prepared mixture. Put part of the mixture into a mold, place the breasts on it and cover with the rest of the mixture. The shape should be such that the breasts are tight. Or put everything in a packing bag and tie it tightly. Place the marinated chicken breasts in the refrigerator for at least 24 hours.
  2. We will get the following result: liquid was released from the meat, it became denser and is in brine.
  3. We take out the chicken meat from the brine, rinse it thoroughly under running water, dry it with a towel, wrap it in cheesecloth and hang it to dry. The degree of drying is to taste. You can store chicken breast balyk in the same gauze in the refrigerator.
