Chicken Fillet Baked with Carrots, Onions and Sour Cream

A great idea for a family dinner – chicken meat baked under a tender vegetable “coat” of carrots and onions. Thanks to the sour cream marinade with onions and garlic, the chicken fillet is juicy and aromatic. Marinating the chicken fillet in advance will save you a lot of cooking time. Simple and delicious!

Servings: 6

Ingredients

  • Chicken breast (fillet) – 400 g
  • Carrots – 300 g (2-3 pcs.)
  • Onions – 300 g (3-4 pcs.)
  • Garlic – 2-3 cloves
  • Sour cream – 250 g
  • Egg – 1 pc.
  • Lemon juice – 1-2 tbsp
  • Ground paprika – to taste
  • Ground black pepper – to taste
  • Salt – to taste (0.5 teaspoon)
  • Vegetable oil – for frying and preparing the mold
  • Fresh greens (for serving) – 2-3 branches

Directions

  1. Cut the chicken fillet into small pieces.
  2. Cooking the marinade. To do this, break an egg into a bowl, add sour cream (100 g), and mix until smooth. Peel one onion and all the garlic. Chop finely.
  3. Put chopped onion and garlic in the egg-sour cream mass. Add salt, pepper, paprika, and lemon juice. Mix the marinade.
  4. We spread the chicken meat in the prepared marinade, mix. Cover the bowl with cling film and marinate the chicken fillet for 2 hours.
  5. Peel the remaining onion and cut into small cubes. Peel the carrots and rub them on a coarse grater.
  6. Heat vegetable oil in a frying pan and fry the onion until transparent, 1-2 minutes. Add carrots and fry until soft, 2-3 minutes.
  7. We turn on the oven to warm up to 200 degrees. Grease the baking dish with vegetable oil. We spread the chicken meat in the form along with the marinade.
  8. Put the fried vegetables on the chicken and level. Lubricate the top with the remaining sour cream, distributing it evenly.
  9. We put the form in an oven preheated to 200 degrees and bake the chicken fillet with carrots, onions, and sour cream for about 25-30 minutes.
  10. Chicken breast baked with vegetables and sour cream is ready. Sprinkle chopped herbs on the casserole.
  11. Cut the casserole into portions and serve. The dish is well complemented with any side dish, such as mashed potatoes.
