Chicken with Peanuts Ingredients

  • Chicken – 1 Piece
  • Peanuts – 0.5 Cup
  • Chili pepper – 1 Piece
  • Sweet pepper – 1 Piece
  • Onion – 1 Piece
  • Garlic – 2 Cloves
  • Chives (feather) – 4 Pieces
  • Vegetable Oil – 0.5 Cup
  • Soy sauce – 4 Tbsp. spoons
  • Flour – 1 Art. the spoon
  • Brown Sugar – 2 Teaspoons
  • Ginger – – To taste

Chicken with Peanuts Instructions

  1. Cut sweet pepper in half, remove seeds and membranes, then cut into 1-inch squares.
  2. Cut onion into large strips, roughly 1 inch wide.
  3. Finely chop green onion, reserving some pieces for garnish at the end.
  4. Cut chicken into medium 2-3 inch pieces, discarding excess bones if desired.
  5. Heat 0.5 cup vegetable oil in a wok over high heat for 2 min until shimmering.
  6. Add peanuts to hot oil, fry for 1-2 min until fragrant, then remove to a plate with a slotted spoon.
  7. Add chicken pieces to hot oil, fry over high heat for 8-10 min, stirring occasionally, until golden brown and cooked through (internal temperature 74°C / 165°F).
  8. Add sweet pepper pieces and whole chili pepper, continue frying over high heat for 10 min.
  9. Add chopped onion and garlic cloves, fry over high heat for 10 min.
  10. Remove and discard garlic cloves, then add chopped green onion and ginger to taste, fry over high heat for 10-15 min until vegetables are soft.
  11. While chicken cooks, whisk together 4 Tbsp soy sauce, 1 Tbsp flour, 2 tsp brown sugar, and roughly 0.5 cup warm water until smooth.
  12. Pour sauce into wok, add peanuts back in, stir well to combine.
  13. Reduce heat to medium, simmer for 5-10 min, stirring occasionally, until sauce thickens.
  14. Remove from heat and serve immediately, garnished with reserved green onion.
