Chocolate-Carrot Roll with Buttercream

The recipe for a delicious chocolate carrot roll with buttercream! I strongly advise everyone to cook.

Ingredients

For a biscuit:

  • Eggs – 3 pcs.
  • Sugar – 70 g
  • Carrots – 100 g
  • Flour – 100 g
  • Baking powder – 0.5 teaspoon.
  • Raisins – 30 g
  • Walnuts (peeled) – 20 g
  • Ground cinnamon – 1 teaspoon
  • Cocoa powder – 3 teaspoon
  • Vegetable oil – for greasing parchment

For the cream:

  • Cream 33% – 150 ml
  • Mascarpone cheese – 240 g
  • Ground cinnamon – 0.5 teaspoon.
  • Sugar (or powdered sugar) – 20 g
  • Powdered sugar – for dusting

Directions

  1. Rub the carrots on a fine grater and squeeze out the juice.
  2. Grind the nuts with a rolling pin, but not very finely.
  3. Mix dry ingredients: flour, cinnamon, cocoa, and baking powder.
  4. In a separate bowl, beat eggs with sugar until fluffy.
  5. Add washed and dried raisins, chopped walnuts, and grated carrots to the beaten eggs. Mix well.
  6. Add a mixture of dry ingredients.
  7. Mix with a spatula from the bottom to top – and the chocolate biscuit dough with carrots is ready.
  8. Cover the baking sheet with parchment, grease with oil, and evenly distribute the dough in a layer 1 cm thick. Bake the carrot biscuit for 15 minutes at 180 degrees.
  9. Sprinkle a towel with powdered sugar, put a chocolate-carrot biscuit on it. Gently roll up, leave to cool wrapped.
  10. Preparing the cream. Whisk the chilled cream 33% until fluffy with sugar or powdered sugar.
  11. In a separate bowl, stir the mascarpone until smooth, add cinnamon.
  12. And we combine these masses, gradually adding whipped cream to the mascarpone. The cream is ready.
  13. Expand the cooled biscuit, evenly distribute the cream over it.
  14. Gently roll up into a finished roll.
  15. Cool and cut into portions.
