Carrots and other vegetable snacks are very popular these days. And today I will tell you how to make a delicious and very tender carrot roll with two types of filling – apple-semolina and vegetable. The recipe is simple, the carrot roll looks very elegant.

Servings: 6

Ingredients

  • Carrots – 1 kg
  • Apples – 4 pcs.
  • Zucchini – 1 pc.
  • Bulgarian pepper – 1 pc.
  • Chicken eggs – 3 pcs.
  • Sour cream – 1 glass
  • Butter – 30 g
  • Semolina – 4 tbsp
  • Wheat flour – 6 tbsp
  • Sugar – 6 tbsp

Directions

  1. Prepare foods for the carrot roll. Cut part of the carrots into strips and simmer in water for 10 minutes.
  2. Peel and core the apples and cut them into cubes. Combine chopped apples with semolina and mix. Then boil the apples with semolina and cool.
  3. Add eggs to apples, mix. Cut the remaining carrots into cubes. Cut the courgettes into cubes. Dice the pepper. Combine chopped vegetables and simmer until half cooked in water.
  4. Saute flour in a dry frying pan and cool. Combine sour cream with sugar and flour and bring the mixture to a boil, stirring constantly.
  5. Put strips of carrots on parchment, then egg-apple mass and vegetables.
  6. Form a carrot roll with apples, zucchini, and bell peppers. Pour sour cream sauce over the roll. Cover the baking sheet with parchment, grease it with butter. Put the carrot roll on a baking sheet and bake in the oven at 170 degrees for 20-25 minutes.
  7. Before serving, cut the carrot roll with apples and vegetables into portions.
