Chocolate Muffin with Zucchini and Curd Filling

A delicious chocolate muffin can be made by adding zucchini to the dough. Thanks to the zucchini, the cake turns out to be tender, slightly moist inside. And the curd filling gives the chocolate cake an extra flavor. Thanks to the light filling, the cake looks very beautiful and unusual in cut.

Ingredients

For filling:

  • Cottage cheese – 200 g
  • Egg – 1 pc.
  • Sugar – 3 tbsp
  • Corn starch – 1 tbsp (with a slide)

  • Zucchini – 200 g
  • Flour – 150 g
  • Sugar – 150 g
  • Sour cream – 70 g
  • Vegetable oil – 70 ml + 1 tablespoon for greasing the mold
  • Egg – 1 pc.
  • Cocoa powder – 15 g
  • Vanilla sugar – 10 g
  • or vanillin – on the tip of a spoon
  • Baking powder – 1 teaspoon
  • Salt – 0.5 teaspoon

Directions

  1. First, let’s prepare the curd filling. We will prepare all the necessary ingredients.
  2. We break the egg and send it to a deep bowl. Add cottage cheese, sugar and starch.
  3. Beat until smooth. The curd filling is ready.
  4. We prepare ingredients for school-courgette dough.
  5. Rub the zucchini on a fine grater. Let the zucchini stand for about 5 minutes. Squeeze the released liquid and drain.
  6. Break the egg into a bowl, where we will knead the dough. Add sugar, vanilla sugar and salt.
  7. Beat the egg with sugar and salt with a mixer. Add sour cream and vegetable oil. Whisk.
  8. Add flour, cocoa and baking powder sifted together.
  9. Beat until smooth.
  10. Add grated zucchini to the chocolate dough.
  11. Mix well. We turn on the oven to heat up to 180 degrees.
  12. Grease the baking dish with vegetable oil. I have a rectangular shape 24 by 10 cm. The dough is conventionally divided into 3 parts. We spread a third of the dough into a mold.
  13. Put half of the curd filling on top. Using a toothpick / skewer, kind of slightly mix the filling.
  14. Then again we lay out part of the dough, then again the curd filling and cover the top with the remaining dough.
  15. We bake a chocolate cake with zucchini and curd filling in the oven at 180 degrees for 40-60 minutes. We check the readiness of the cake with a toothpick. It should come out dry. Let the finished cake cool.
  16. Take the cake out of the mold, cut it into portions and treat yourself to it!
