Muffins are one of the simplest pastries. And so that the finished muffins have a crispy crust on the surface, you need to sprinkle the dough with a little sugar before baking.
Ingredients
Candied cherry – 100 g
Chocolate – 80 g
Butter – 45 g + for lubricating molds
Egg – 1 pc.
Milk – 200 g
Flour – 200 g + 1 tablespoon
Sugar – 100 g + 1 tablespoon
Baking powder – 2 teaspoon
Soda – 1/4 teaspoon
Fine salt – 1/4 teaspoon.
Directions
Melt the chocolate and butter in a water bath or microwave.
Stir the melted chocolate and set aside to cool.
Meanwhile, in a bowl, combine 200 g flour with salt, baking soda and baking powder.
Mix candied fruits with 1 tablespoon. flour.
In the cooled chocolate, add 100 g of sugar, mix.
Add egg, stir.
Then pour in the milk, mix well.
This is the kind of homogeneous chocolate mass you should get.
Pour the chocolate mixture into a bowl of flour, stir with a spoon until the flour is already mixed in, but you don’t need to stir the lumps! (This heterogeneity is another difference between muffins and muffins and cupcakes.)
Pour cherries with flour into the dough, stir with a spoon in two or three movements.
Put the dough in muffin tins (I have silicone tins, so I don’t grease them, and if you have metal ones, you need to grease them with butter).
Sprinkle the remaining sugar on top of the muffins.
Place in an oven preheated to 200-205 degrees. Bake the chocolate muffins for 20-25 minutes (depending on the oven).
Chocolate muffins with candied cherry fruits are ready.
