  • 2 sausages (chorizo)
  • 2 tablespoon honey
  • 400 ml red wine
  • 2 tablespoon red wine vinegar or balsamic vinegar

Instructions

  1. First cut the chorizo into slices. Then heat the honey in a saucepan and deglaze with the red wine. Add the vinegar and bring to the boil. Turn down the heat and add the sausage slices to the red wine stock that is no longer boiling.
  2. The sausage slices are only heated, not boiled! Let them stand for about 15 minutes and then take them out of the brew. The brew is then reduced by half and the sausage slices are added again at the end.
  3. The longer the chorizo is heated, the harder it gets, at least that`s what my own observations were. I serve it in a bowl and serve with ciabatta.
