Ingredients

  • 500 g apples, e.., Elstar
  • 2 tablespoon, heaped vanilla sugar
  • 1 teaspoon, leveled cinnamon powder
  • 250 g mascarpone
  • 350 g low-fat quark
  • 2 tablespoon sugar
  • 2 tablespoon lemon juice
  • 150 g marzipan paste
  • 200 g cream
  • 270 g ladyfiners
  • 150 ml coffee
  • 6 tablespoon amaretto or calvados
  • some cocoa powder for dusting

Instructions

  1. Peel and core the apples and cut into fine cubes. Put the vanilla sugar and cinnamon in a saucepan and simmer over a gentle heat until soft but not disintegrated. Then let it cool down.
  2. Mix the mascarpone, quark, sugar and lemon juice together. Gently heat the marzipan in the microwave and stir into the cream. I always do this with the blender. So there are no lumps. Whip the cream and fold into the cream.
  3. Mix the coffee with the amaretto or calvados. Line a flat baking dish with half of the ladyfingers and soak half of the coffee mixture. The steamed apple cubes are then distributed on top. Then half of the cream comes on top.
  4. Then put another layer of ladyfingers, which is soaked with the rest of the coffee.
  5. The last layer is then again cream. Then the cocoa powder is dusted over it. Let it soak in the refrigerator for several hours.
