Corn Biscuits with Cottage Cheese, Tomatoes and Basil

I present to your attention an interesting and tasty analogue of pizza – biscuits with salty cottage cheese, juicy tomatoes and aromatic basil. Usually, chopped dough is used to make biscuits, but in this recipe, biscuits are made from dough with the addition of corn flour. Such corn biscuits will definitely appeal to those who like healthy and tasty pastries!

Cook: 1 hour 10 minutes

Ingredients

For the dough:

  • Corn flour – 100 g
  • Wheat flour – 160 g
  • Olive oil – 40 ml
  • Ground paprika – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Water – 140 ml

For filling:

  • Tomatoes – 250 g
  • Cottage cheese – 200 g
  • Basil – 3 sprigs
  • Salt – 1/4 teaspoon

Directions

  1. Combine corn flour and wheat flour in a deep bowl. Add salt and paprika.
  2. Pour olive oil into lukewarm water.
  3. Pour the water and butter into the flour. Stir with a spoon.
  4. Then knead the dough with your hands. The dough will be soft, but it will perfectly keep the shape of a bun. Wrap the dough in plastic wrap and refrigerate for 20 minutes.
  5. For the filling, combine cottage cheese, salt and finely chopped basil leaves.
  6. Cut the tomatoes into slices about 3 mm thick.
  7. Turn on the oven to heat up to 180 degrees.
    Divide the dough into 2 equal parts (we get two small biscuits with a diameter of 20 cm).
  8. On floured parchment, use a rolling pin to roll the dough ball into a thin round layer 30 cm in diameter.
  9. Put half of the curd filling on the dough and distribute, stepping back from the edges by about 5 cm. Put tomato circles on top of the curd filling.
  10. Wrap the empty edges of the dough to the center with an overlap, slightly covering the filling.
    Form the second biscuit in the same way.
  11. Transfer the biscuits and parchment paper to a baking sheet.
  12. Bake corn biscuits with cottage cheese, tomatoes and basil in the oven at 180 degrees for 25-30 minutes.
  13. Cool the biscuits slightly, cut and serve, garnish with fresh herbs.
  14. Slightly crunchy, loose dough combined with a juicy and aromatic filling is a biscuit.
