Ingredients
- 500 g peas, frozen
- 750 ml vegetable stock
- 2 tablespoon cornstarch
- 250 ml sparkling wine
- 250 ml sweet cream
- salt and pepper

- Boil the peas in the broth for 5 minutes. Scoop the peas out of the soup, puree them and add them back to the soup. Mix the starch with a little water and use it to thicken the soup. Season the soup with salt and pepper and pour it into a soup tureen to make it look good.
- Whip the cream until stiff.
- At the table, carefully stir the champagne and cream into the soup and enjoy immediately.
