A real autumn baking – a quince and nuts muffin. Add spices to the cake dough, cover the finished cake with milk glaze, decorate with nuts and caramelized quince slices. It will turn out to be very aromatic and tasty! Take note of the recipe!
Ingredients
Quince (large) – 1 pc.
Walnuts – 35 g
Flour – 200 g
Eggs – 3 pcs.
Brown sugar – 150 g
Vegetable oil – 120 g
Lemon – 1 pc.
Cinnamon – 0.5 teaspoon
Cardamom – 0.5 teaspoon
Baking powder – 1 teaspoon
White sugar – 50 g *
For glaze:
Powdered sugar – 45 g
Butter – 30 g
Milk – 40 g
Directions
Before making a cake with quince and nuts, we prepare all the necessary products. Preheat the oven to 180 degrees.
Using a fine grater, remove the zest from the lemon (only the yellow part). Peel and grate half of the quince. Sprinkle the quince with the juice of half a lemon.
Dry the walnuts in a pan and chop with a knife.
Break the eggs into a bowl and beat with a mixer. Then add brown sugar and whisk.
Pour in vegetable oil and beat again with a mixer.
Pour nuts into the whipped mass (leaving 1 teaspoon for decoration), cinnamon and cardamom. Add chopped quince and lemon zest. Sift flour with baking powder and combine with the rest of the dough ingredients. Mix gently. The cake dough is ready.
Grease the cake pan with a piece of butter and sprinkle with flour. The best way to bake the cake is in a pan with a hole in the middle, but I haven’t had one. I adapted a small cauldron for this, in the center of which I placed a stack of cupcake molds, wrapping them with foil and parchment. We spread the dough into the prepared form. We bake a nut cake with quince in an oven preheated to 180 degrees for about 50 minutes.
While the cake is baking, cut the other half of the quince into slices, mix with white sugar and caramelize in a frying pan.
We take the finished cake out of the oven and let it cool.
We make icing from powdered sugar, butter and milk. Mix all the ingredients, bring to a boil and boil over low heat for 7 minutes, until slightly thickened.
Remove the cooled cake from the mold and cover with glaze.
Put quince slices on top of the cake, sprinkle with walnuts. Cupcake with quince and nuts is ready.
